No one is born with "high cholesterol"; it takes time to develop it -- and get it back into a healthy range again, if your cholesterol is not where you and your doctor want it to be.
The good news is that this is not as hard as you imagine! You can get your cholesterol under control with a couple of easy changes -- and STILL eat extraordinarily well at the same time. Really!

Now, your own situation may be quite different from mine, but most people can make incredible progress just with one or two simple changes in how they eat.

Should you supplement -- or not?
For many people wanting to lower their cholesterol, this is the key question.
There is a relatively new class of medications called statins that are available (and you should definitely consult your medical practitioner about this!) Whether they are right for you, only you can decide, armed with enough facts, and in consultation with your medical advisor.
What I know from personal experience (and I am not alone in this, by far) is that you really can control your cholesterol levels through simple dietary changes and moderate supplementation.
Here's how I got my cholesterol back into shape (in case you didn't want to leave this page and hop over to my blog to check it out):
* I cut out eating all beef products unless it is organically raised, locally grown, grass-fed and pasture-raised. This means I am eating about 90% less beef than I was several years ago -- but what I do eat is leaner and very healthy.
* I switched the kind of mik I drink (and use in cooking) from whole milk to 2% -- and I buy ONLY organic milk from dairies that certify how the cows are fed and raised. This limits me to one or two sources, but honestly, the quality and taste of the milk -- even at only 2% fat -- still tastes like real milk to me. (Now remember, I grew up in Iowa, and as a kid I used to drink milk fresh from the cow -- so I KNOW what milk is supposed to taste like. What is sold in supermarkets as "milk" has been so processed it doesn't even taste right!)
* I added ONE supplement: nattokinase (a Japanese product made from natto, a byproduct of soy.) It's an enzyme, and works to keep your blood clear of excess cholesterol.
These three simple things above got my cholesterol levels well into the normal range in less than 6 months' time. I attribute the changes in my cholesterol directly to the combination of the three steps above -- because I did those things specifically targeting my cholesterol levels.
I still eat eggs fairly often (maybe twice a week), use butter when I feel like it (in moderation), and eat ice cream when I want to. And I am maintaining the cholesterol levels I want!
The bottom line is, YOU CAN DO THIS! And, have a great time eating well too -- with great organic gourmet foods.
