Organic Farms

Organic farms: this is where it all begins. One of the secret treasures of a real gourmet is where to find the organic farms. Luckily these days, there are more and more of them -- including hobby farms and cottage industries focused on wonderful artisanal food products -- often specialists in one or more product areas, from produce to livestock, from dairy to poultry.

Artisanal butters, eggs, cheese, salt, and wine have become staples in the gourmet pantry, as have fresh herbs and vegetables.

More and more, organic farms are focusing on selling directly to the consumer, cutting out the middleman, and allowing more profit to plow back into the business. Initially it costs more to produce organic foods, because the process is more labor- intensive.

Sometimes crop pests need to be removed by hand, since synthetic pesticides are never used in organic farming, and there is more personal involvement with the grower, a deeper relationship with the land and the plants and animals grown there.

You can often drive to a local organic farm and pick your greens, veggies and/or fruit yourself, fresh from the field; other farms will give you a daily harvest ready for your table, through a Community-Supported Agriculture program. Either way, you will receive the best possible fresh, organic foods direct from the farm to your kitchen.

Sometimes the farms also sell their home-baked products or home-made jams, jellies and preserves, all made with organic ingredients and with delicious nuances and flavors impossible to find elsewhere.

You can sometimes buy honey from fields where you can still see the bees at work visiting flowers that will eventually produce even more of the same. It’s a true joy to be so close to the source -- and to form relationships with what you eat in such a direct way.
